What Are Bitter Greens?
Bitter greens are a unique type of leafy vegetable known for their distinct, slightly astringent taste. Typically darker in color, they bring depth and complexity to a dish. When picked young, they tend to be more tender and mildly bitter, whereas mature greens develop a stronger, more pronounced bitterness.
You can find a variety of bitter greens at your local grocery store or farmers' market. Here are some to look out for:
Dandelion Greens
Mustard Greens
Wasabi Greens
Kale
Turnip Greens
Mizuna
Arugula (Rocket)
Bok Choy Leaves
Collard Greens
Nettles
Chicory
Radicchio (technically a leafy green despite its red hue)
Bitter greens pack a nutritional punch, making them an excellent addition to any diet. Here’s why:
Rich in Vitamins & Minerals – Loaded with vitamins A, C, and K, as well as iron, magnesium, potassium, and calcium. Some bitter greens contain between 150-285 mg of calcium per cooked cup—comparable to the 300 mg found in a cup of low-fat milk.
High in Antioxidants – Protects cells from damage and reduces the risk of chronic diseases.
Great for Digestion – A fantastic source of fiber, which promotes gut health and keeps digestion running smoothly.
Depending on the level of bitterness, there are different ways to prepare bitter greens to enhance their flavor:
Blanching – A quick dip in boiling water can help reduce bitterness, especially for hearty greens like kale and collards.
Balancing with Acid, Salt, or Sweetness – A splash of vinegar or citrus, a pinch of salt, or a touch of sweetness (like honey or fruit) can mellow out bitterness in raw or cooked greens.
Pairing with Bold Flavors & Healthy Fats – Adding ingredients like gruyère cheese, nuts, dried fruit, or a rich protein (such as chicken legs or fatty fish) can complement and balance the flavor profile.
