Chicken Fajitas w/ Homemade Guac! — Tiny Spoon Chef

It’s all about that flavor flav!

The perfect combination of spices topped with that homemade guac, there is nothing better.

The main stuff:

  • olive oil
  • 4 chicken thighs
  • 3 bell peppers- 1 red, 1 yellow, 1 green. cut into strips
  • 1 red onion- cut into strips
  • cilantro to taste
  • For the Guac:
  • 1 minced clove of garlic
  • juice of one lime
  • 1 minced jalapeño (membranes and seeds will add extra spice)
  • half a red onion, diced
  • 2 acovados
  • fresh cilantro to taste
  • salt to taste

🥄 Combine ingredients in a medium bowl and mash until smooth or desired consistency.

Seasoning:

  • 2 t chili powder
  • 1/2 t smoked paprika
  • 1/2 t sweet paprika
  • 1 t ground cumin
  • 1/2 t ground coriander
  • 3/4 t garlic powder
  • 1/2 t onion powder
  • 1/2 t dried oregano
  • 1/4-1/2 t cayenne pepper (to taste)
  • salt to taste

🥄 Mix until well combined.

So, what now?

 🥄 Season chicken thighs with of the half seasoning mix (reserve the other half for seasoning peppers & onions).

 🥄 Bring a skillet to medium heat, add a drizzle of olive oil. Cook chicken thighs until an internal temperature of 165°

 🥄 Remove the chicken from the pan. Add another drizzle of olive oil, and add the peppers and onions.

 🥄 Add remaining seasoning mix to the pan of peppers and onions and cook until tender or desired texture.

 🥄 Char preferred tortilla (we used corn) on gas oven burner (BE CAREFUL). If you have electric, you’ll have to get creative!

 🥄 Assemble your fajita however you hear desires! We started with guac, then chicken, then peppers & onions, then topped with some fresh lime juice and cilantro!
