The Game-Changing Ingredient Your Meals Are Missing
October 29, 2019
It’s true. Chef Janice hasn’t stopped talking about it for a month. And as a former instructor in an award-winning bakery (as well as, you know, the Best of Boston personal chef and founder of Tiny Spoon Chef), Janice knows her baked goods.
Luckily for the rest of us, she also loves to share.
If you’re not culinarily-inclined, you probably have a brand you’ve always grabbed and rarely thought about. Less brand loyalty, more convenience. Much like white sugar, it gets a bad rap for being the most basic of the basic, without much variation in quality or impact on flavor. But boy oh boy, is that a misconception. According to Janice - an initial skeptic - it’s been a life-changing revelation (which feels completely reasonable and proportional if you ask us). In fact, the recommendation was originally made by a Tiny Spoon client, who always keep us learning and growing (shoutout to Hannah)!
Don’t stop reading! We know it’s not a sexy ingredient.
But it will transform your bagels, breads, and tortillas into the exciting part of your meal. In fact, One Mighty Mill bagels and tortillas are available in select Whole Foods stores around Greater Boston, and they have a tendency to fly off shelves. The difference is the sustainable, pesticide-free, locally milled wheat that comes out of the small Lynn, MA farm. (No this is not sponsored, we just really, really like them!)
The proof is in the pudding - or the pâtisserie, if we’re being technical. Specifically, one of the only places you can get the flour is at Sofra, Cambridge’s gem of a Middle-Eastern bakery. With a James Beard Award finalist as the Head Pastry Chef and countless accolades both local and national, Sofra’s baking choices are ones you can trust. And while the flour itself is difficult to find outside of the One Mighty Mill flagship and Sofra, it’s worth the hunt. Just listen to what Janice has to say:
So, what are you waiting for? Go forth, friends, and traverse this brave new Terrain of Grain.
